This was literally the best chicken tortilla soup I’ve ever tasted. I savored every bite and just couldn’t get enough of this recipe from feastingathome.com. It was super simple to make and did I mention all you really need is an instant pot? Perfect Mommy dinner preparation tool! This is also a gluten-free soup.

Total Time: 40 Min.    Prep Time: 10 min.    Cooking Time: 30 min.

Equipment: Instant pot

Ingredients for soup:

1-2 tablespoons olive oil

1 onion, diced

5 garlic cloves, rough chopped 

1-2 cups carrots, diced

1 cup celery, diced

1 x 14.5 ounce can diced tomatoes, and juices (fire-roasted) or 1 1/2 cups diced tomatoes with juices

1 small 4-ounce can, mild green chilies (or sub 1 poblano chili, diced)

2 Ibs chicken thighs (boneless, skinless) left whole 

1 cup dry black beans or sub 1-2 cans black beans, or sub corn (do not use dry beans with chicken breasts as breasts will overcook.)breasts will

4 cups chicken stock or broth

2 cups water

2 tsp. sea salt (or Himalayan salt)

2 tsp. cumin

2 tsp. chili powder

1 tsp. dried oregano

juice from 1-2 lime

Garnish:

Garnish with any or all the following: tortilla strips or crunched chips, grated cheese, sour cream, avocado, hot sauce, cilantro, fresh jalapeno, scallions

Instructions:

 1. Set the Instant Pot to the saute function. Saute onions in the oil for about 3-4 minutes while you prep the garlic, carrots, and celery. Add them to the pot an saute for 3-4 minutes

2. Add the diced tomato and their juices, green chilies, chicken thighs 9while), dry bacl beans ( or canned, drained), chickn stock, water, salt and all the spices. Give it a good stir, and set the Instant Pot to pressure cook on high. If using dry black beans, pressure cook 25 minutes. If suing canned black beand, pressure cook for 14 minutes. 

3. Manually let the pressure out, covering steam with a kitchen town. Or feel free to release pressure natutally. 

4. Shred the chicken thighs with a fork. The soup will thicken. Squeeze a generous amount of lime juice and taste for salt adding if neccessary. Make sure you have a good balacne between lime and the salt.

5. Divide amoung bowls and top with tortillia strips or crunched chips, cheese, sour cream, scallions or avocade and cilantro. Add hot sauce hor added heat if you want.
