Ok, before the summer ends you need to make these Hot Girl Tacos! They are super easy, healthy, and did I mention yummy!  I am just recreating these tacos I found from Healthy Girl Kitchen If you haven’t heard of her, I highly recommend checking her out. She has a ton of vegan-based recipes that will make your mouth water and your taste buds explode.

Prep Time: 5 min.     Cooking Time: 10 min

Equipment Needed: saucepan, mixing bowl

Ingredients:

Warm corn tortillas

Chickpeas sauteed in bbq sauce

Avocado Slices

Sliced purple cabbage

Steamed corn

Dairy-free sour cream

Cilantro

Lime

Vegan Sour Cream:

blend 1.5 cups cashews, 1 tsp apple cider vinegar, 2 tbsp lemon juice, 1 cup water until smooth

 

Directions:

Assemble your tacos. Add cilantro, squeeze your lime and enjoy!
